Coco-Nut Bites

Remember how a few weeks ago I started a post with, SUMMER IS HERE (or something super clever like that)? Well what the heck!? How is it past mid-June already??? There is some kind of correlation between nice weather and the speed of time. I should really reach out to NASA about that revelation. ANYWAY, I just can’t get over it. But, along with enjoying the nice weather, we have been enjoying time with friends, time with our pup and time with each other. Pretty much all the greatest things.

Incase you don’t follow me on Instagram and watch my stories every day (cough, cough, you should be…@good.chives), I need to fill you in on the excitement that happened at our house this past week. (I use the word “excitement” lightly here.) Two Saturday’s ago, I was minding my own business doing the dishes, humming some tunes because I was feeling productive and getting ready to move onto laundry. As I began the trek to our laundry room basement (definitely being dramatic here) I opened the door to find water covering the floor, coming up from a drain. Fast forward through us cleaning it up, thinking we fixed it, it happening again, cleaning AGAIN — to us bringing in a plumber who had to jackhammer (literally) about an 8 ft x 2 ft section of our basement concrete flooring. If you are a homeowner, or own anything, you know that it is NOT fun when something goes wrong that you HAVE TO fix. You are at the mercy of the pros you bring in and you are hoping that whatever they do, you aren’t left with a million $ bill at the end. All things considered, things could have been much worse. They completely replaced our drain pipe, which barely even resembled a pipe anymore (YAY OLD HOUSES!), rerouted it so we don’t see it anymore (that actually is a YAY!) and now our kitchen sink and dishwasher can function again. Moral of this story…a lot of things in the moment seem like the absolute WORST POSSIBLE THING EVER. The last thing we wanted, or really had time to deal with, with a busted pipe. But alas, the pipe gods did not care. So as we moved everything from the basement into the dining room and ripped up the carpeting, Ross and I decided we would think about all the ways “this could be worse” and you know what? We came up with A LOT of things that could be worse. It reminded me that it’s important to take a step back and realize that all in all, we are extremely lucky people, with a roof over our head, clean running water, an abundance of delicious food, amazing family and friends & SO MUCH MORE. I encourage you, when it seems like you just cannot catch a break – take that step back and think about all the good things going on in your life. It really helps put things in perspective.

Now that the kitchen is back in order, new recipes are on the docket again! I ran out of my purse stash of Larabars this week, so I decided to whip up my own version: Coco-Nut Bites. These babies are sweet, satisfying, and the perfect grab and go snack when you are on the run and need something to tide you over. The kitchen tool you need for these is a food processor (a blender like a Ninja or Vitamix may work, possibly even a Magic Bullet, but I have not tried these). My food processor was worth EVERY. SINGLE. PENNY. we spent on it. If you don’t have one, I really, HIGHLY, totally suggest make the purchase.

Coco-Nut Bites

Ingredients:

  • 1 1/4 cup of pitted dates
  • 1/2 cup pecans
  • 1/2 cup walnuts
  • 1/4 cup shredded coconut + 1/4 cup for rolling the bites in
  • 1 t cocoa powder (no sugar added)
  • 1/4 t pink Himalayan sea salt
  • 1/4 t vanilla extract

Directions:

  1. Place all ingredients (except for the additional 1/4 cup of shredded coconut) into your food processor.
  2. Blend for approximately 45 seconds.
  3. When you open the lid the mixture will look crumbly (see photo below), but you will use a tablespoon scoop to remove he mixture and form into bite size pieces.
  4. Roll the bite in the additional 1/4 cup shredded coconut – the mixture will make approximately 12 bites.
  5. Store in the fridge up to 1 week. As if there will be any left by then! 🙂

Paleo Red Potato Salad

Before we get into the good stuff (a.k.a. this delicious potato salad) I wanted to address something on here. While I try hard every day to make good decisions for my health and overall well being, that doesn’t always happen. I will be the first to admit that I over indulge time to time and that my workout regimen needs attention. But that is why I am constantly working to find that balance & for me, and I hope you too, Good Chives is helping me find that. My goal is to enjoy my life & feel good living it each and every day. And the fact of the matter is that when I focus daily on eating clean, drinking enough water, getting a workout in and giving myself some relaxation time – I feel like I am running on all cylinders and it’s great. BUT don’t for a second think that I am ever trying to hide the fact that I don’t have this system down pat yet.

Lettuce Wrap Salad with Almond Butter Sauce

Friday, Friday it’s finally Friday! I always forget how hard a “normal” week is after as short week. The first few days seem never ending. But, we survived and Saturday is right around the corner. I am ecstatic because for the next two weekends Ross and I will both be in Iowa City, with no real agenda. This means we can actually get to work on some of the final projects we have left in the kitchen. (Examples include: quarter round on the cabinets and windows, baseboard and backsplash) It doesn’t seem like it’s that much to do, but with these all being the “final” details we want to make sure they are done right – so we will see how far we can get over the next few weeks.
